Acutally, it's not /mandatory/ that you try out different kayaks before deciding which one to build. When I saw Nick's Guillemot Expedition Single, I fell in love and the match was made then and there. Thirteen weeks later (approx 400 hrs build time), I paddled her on a week long expedition in the San Juan Islands. You can get it right the first time.
