I've found that installing the knee braces so that the wedge is parallel to the boat's centerline fits me best. It doesn't seem intuitive, but it does feel right. Also, when looking at commercially-outfitted kayaks, the concavity in the knee/thigh braces is generally parallel to the boat's centerline.
