People have tried the plasti-dip stuff and reported it wasn't fully waterproof. You may want to spend some time searching both this forum and the Greenland forum for various skin coatings in order to find out what people have already reported.

If you want to experiment, build some wood frames and staple nylon skin to the frames. Then you can try lots of different coatings at little cost. Key things to check for-adhesion, flexibility, elasticity, and waterproofing.

Or, if you want to get on with your build, try something that's already been used and worked on nylon. This would include Coelan, Corey's Goop, Dura-Tuff, Zar polyurethane, and Epifanes varnish. I've been using Epifanes varnish over G/Flex epoxy, and so far that's working well, but I don't have enough seasons on any skin yet to know how long it lasts, and I think you said you wanted to stay with one-part finishes.
