Yes, a low volume boat with an ocean cockpit requires different technique, since you have to go in feet first and you can expect to have a significant amount of water in the cockpit. Regarding technique, you just roll over onto your back before you put your feet in the cockpit, rather than trying to spin around inside as is typically taught. Once you've practiced it, the technique is no slower than the method used for larger cockpits. Anyone who paddles such a boat is used to getting in and out, so it's really not a big deal.

SOFs do complicate rescues of any kind, as they typically take on a lot more water and are harder/slower to drain than a boat with bulkheads. Float bags help, but they're not as effective as bulkheads. Those are risks one has to assume and train for if you choose to paddle an SOF.
