Angela,
If you use Rob's sealer/saturation coat method it may take overnight for the first coat to become tack free. WEST recommends recoating within 24 hours to avoid adhesion problems without sanding. Follow the directions of your resin vendor.

You should, actually have to, wet out your cloth in one operation. Using a roller and tipping it can be done in a couple of hours. Things that speed it up are epoxy measuring pumps and having all your mixing materials at hand. One thing Rod didn't mention is using a metal roller pan. They will draw heat out of the mixed epoxy faster than plastic and give you more working time.

I usually do not precoat plywood, just drape my cloth, brush it to shape, secure with clothes pins or masking tape and have at it. The secret is getting the resin on the boat and spreading it around quickly. Once you've got the cloth wet the resin reaction will slow down because of the large area it's exposed to will draw the heat. This will give you time to fuss with the cloth and add or squeegee out excess resin.

Things to watch out for are excess resin pooling and floating the cloth and whiteish areas that are starved and need more resin. There gets to be a point where the resin will start to get hard and ball up if worked anymore. Time to quit is before this happens. Another sign that it's time to quit is if your cloth is getting fuzzy from too much squeegee abrasion. Hope this helps.

BTW where'd you secure your plywood?
