Thanks for the input!

If I go the birch plywood route - I can can buy 3/4" 2x2 or 2x4 pieces for the the cross sections near the cockpit and 1/2" 2x2 or 2x4 sections for everything else...then 1/4 for the lip. Should save me some headache on figuring where to store the excess plywood - my garage is too cramped to build the kayak - will need to build on the patio :-)
