You're right that either oil works, but adding some varnish to the mix (~50%) will make it much more durable and still produce the same look and feel.

Mold/mildew is not an issue with paddles, as they don't stay wet the way a boat interior will. As you mentioned, it's really only an problem for boats if you paddle on fresh water.
