I built sof kayaks for my kids. The started out at 2 and 3 in Micro Sea Fleas, and moved up to low volume Kidarkas at 6 and 7. I like the Yost-styled sof approach becauseI can quickly, cheaply, and easily, make new kayaks as they outgrow them.

The two kidarkas are in the foreground
