I suspect that there is little measurable differece in strength between the two methods. Remember that the wood is sandwiched between glass and epoxy which comprise the majority of the strength. Any gaps in a rolling bevel or bead and cove core get filled with epoxy which is as strong as the wood itself. If you make tight joint you get a somewhat lighter boat.
You shouldn't make your construction decision based based on strength. An aerospace engineer probably cares about the difference but, in my opinion it doesn't matter in kayak kayak construction.
