The price is great for a local supplier.

Are you using the 3 mm because its the only thickness you can get or because some other reason?

While 3 mm is lighter, it is also more flexible and has thinner face plys that are easier to sand through. It does make a lighter weight boat though. I built a boat with 4 mm hull and 3 mm decking....
