I agree with the others so far. I can't see how merely recutting the deck panels you have would accomplish a multi-chined deck. In my mind, I can't see any way to do it without starting with a panel which is somewhat wider than the panel you have now.Even then you'd better have a good CAD program to lay out the new panels. Think of it this way; if you draw a new deck profile with "your" chines and superimposed this new profile over the old deck profile, you will see that you have created two triangles with the bases of each being the old deck and the two sides of these triangles being the sides of the "new" chines. Looking at it this way, you will see that the bases of these triangles (the original deck panels) can not be as long as the sum of the two sides of these triangles, (the new chines)They can't be as long or they wouldn't be triangles! If you look at it that way you will see that it would be impossible to create "new" chines from the original panel unless you've modified every other panel of the boat as well to create a boat that had less beam. I can't stress enough my conviction that if you cut the panel you have, you'll ruin an expensive, well-designed and precision cut kit that already has a multi-chine deck to begin with. If you don't follow my logic and you are still hell-bent on trying it out however, at least you should try it with two 4x8 sheets of lauan underlayment first. At about $10.00 a sheet, if you screw up who cares!
