I would do a lay it on without any epoxy test using the bias thought to make sure you have enough cloth.

since you actually bought double plus one yard you may come up a bit short if laying it on the bias and not straight. since you are most likely glassing the inside of the canoe as well.

incidently, i just layed the cloth straight on my chessapeake kayak. like i said, no major problems except for the extreme ends and those were cured with some good pulling the cloth tight. or try the saran wrap if need be.

hope you meet with success. its not as hard as you think. just be patient.
