I haven't stripped a stitch and glue boat's deck, but if I was going to, I'd just make up some extra deck beams (the radi should all be the same) and fasten them temporarily to the sheer clamps. I think you could go with a spacing greater than 12in.

I'd be curious to know how to handle the joint between the plywood and the stripped deck.
