Phil, I am not an athourity on varnish, just an old woodworker, I use varnish for two reasons,#1-to protect the epoxy first and foremost from the sun, #2-there is in my judgement a small margin of water proofing. The side benifits are ascetics, I live in Florida so you see #1 is very important. I would think that 3 coats would be enough, hopefully the more knowledgeable builders will chime in with better advise
just keep an eye on the deck for varnish erosion. Good luck Nick R.
