I'm in the 'glue the laminations all at once, on the boat' school.
I generally use epoxy (even though it is much more slippery than yellow glue) because I usually have a few gaps (between the internal stem and the strips) that need filling.
If it's a difficult shape to tape (or use pallet wrap), I've used some #6 screws (with wood scrap 'washers') through the lams and into the internal stem. The holes can be plugged and hardly show, or if you are fastidious, you can glue and tape the last lamination in place later.
