One thing I learned about external stems is to use hardwood. Stems always get dinged over time and if you use cedar or soft woods the glass gets fractured and you get white areas. Besides, hard wood bends nicely for a stem. I do the whole cluster at once and with some wax paper under it, I wrap the whole thing with bungee cord. Depending on the boat design and how much of a bend it is, you can also use the fiberglass packing tape.
