Ah, opposite situations. :)

I was thinking of a design for kinves in a drawer and though a scabbard style block (that fits in the drawer) would be safest. Open drawer, lift knife block/scabbard, remove desired knife with no other sharp edges to worry about.
If the block/scabbard is made so the blades are vertical, and edge up, you can fit more in.

With bamboo, I found that sanding is better than edged tools after the initial cuts, cutting can make for splinters. Belt sander for fast work, block and sandpaper for finishing work.
