Mike, I have found yellow cedar to make good, wiry, and flexible pinstripes with good contrast. Of course if you already have a supply of something light colored like pine you can use that. Pinstriping is really pretty easy and adds richness to a design withour looking fussy, even for a simple pattern. As far a walnut goes, I have found that regular black walnut does not darken up as much when the resin hits as does redwood and WRC. The result is that dark WRC will not have much contrast with the walnut after completion. So if you are looking for a nice dark wood, darker than the redwood, consider using Peruvian walnut. I'm not sure I understand where you intend to use the carbon fiber. I have used it to good effect in spot locations and for things like brackets. After reading the article in Sail Mag I'm more inclined to use s-glass than carbon for hull or deck reinforcement.

Which flush fittings are you talking about, Joe's? I have some of Joe's style and they are almost flush inside. They cause no problems at all stuffing a boat completely full.

There's no doubt you spend a lot of time playing in the waves so you have a lot of experience. For the much more protected waters of Puget Sound I love my magnetic hatches. It's so easy for a paddling partner to get in and out of my hatch for some food or clothes in a flash while on the water. You could do a hybrid approach, using magnets for normal stuff but include a fitting on either side of the hatch to hook an additional strap for rougher water.
