Yes, it would be tight. Best bet would be to layout the ribs first, then put stringers over them.

I agree on the skinning each half separately. The seam along the gunwale/shear could be covered with a rub rail. This would also allow tightening of the roving. Currently, my plans are to build separate halves and then join them. I'll save skinning 'till the last step.
