Hi Butch, If you can do it with bead & cove, than don't hesitate for a second. It will save you from planing the strip edges to get a reasonably 'gap-free'surface. If you are building a craft with a lot of compound curves, bead and cove lock together and prevent the individual strips from twisting and springing off.

As to the second question, you don't need full length strips. Check out the link below to get an idea about the different ways you can do it.
