I'm a bit sceptical of using ply that might not stand up to being pounded about a bit. The real investment in building in wood is your time and to put all that effort into something that is possibly substandard is a waste of effort. Sort of like putting cheap and nasty tires onto a good car and then letting the family get around in it. The kayak built of low quality ply is only as good as the low quality ply, not something to trust your life to. No matter what extra effort went into the finish, it still might let you down.
