I use The Nautilus System by New Wave Systems Inc, Jamestown RI.

Pretty powerful tool, relativly low cost ($395) fairly easy to use if you are a CAD user. It is fully 3-D and can give you offsets and panel expansions. You are limited to the number of surfaces you can draw and the plotting leaves something to be desired. I export DXF files to AutoCAD for making good drawings and panel templates.

I think they are working on a new version with added features. Also ask about their disk of Historic kayak designs...crude drawings but interesting.

I think this is the same software used by Seakayaker in their kayak comparison column.
