In fact, it's been done. A paddling buddy of mine in Philadelphia built a Greenland design boat out of insulation foam as an experiment a few years ago, and brought it to a Chesapeake Bay symposium to try out. (If I recall correctly, he basically glued it together.) The only operational problem I can remember was that it was so incredibly light, and displaced so little water, that it sat with about 95% freeboard, and was impossible to keep upright without a lot of ballast rock. I'll ask him if he kept any data.
