Those 'pretty wood strips' in our varnished boats can lead the eye away from areas of 'unfairness' that will be really obvious under paint.
So, if you need to paint (or want to paint) your boat to hide some cosmetic defects, you should probably spend some time with fairing compound or, at the minimum, some high-build primer to get the surface looking good. Even sanding scratches will show through some paint layers.

A lot of the 'good looking' and durable paints need a good touch to apply with roller/brush. Spraying can be easier, but you need the (safe and clean) shop setup and experience there as well.
Finding a good auto spray guy would be worth the $$, IMO.
