My main reasoning? Time. I'm going to only be able to work on the kayak construction a weekend or two a month. I don't know how many coats of paint will be needed to seal polyester, and having to apply new coats within a time window will be a deal breaker for me. I'm not sure when I'll be finished, either... since I'm building in an unheated barn, cold weather might be a factor.
It sounds like this stuff will add some toughness to the polyester, too... maybe puncture resistance? It's supposedly gap filling, too... so it might take a single coat to cover the polyester. If I can put a coat or two of paint over the adhesive to add UV resistance, I avoid the need to put coat after coat on, within a time window.
Worst case scenario, it's all horrible... at which point I blew a bit of money (polyester + adhesive + paint looks like it might be cheap), and revert back to plan B (Nylon & Goop). It'll give me plenty of experience sewing ;o).
