I like the flexibility of being able to move things around for different projects and different stages, so I prefer to use tabletops set on sawhorses. The set-up that I find I use the most consists of two factory-reject interior flush doors set on four of those folding plastic sawhorses. It is light and easy to move around, and can be set up end to end or side to side. The tops can be angled, too, for planing the edge of a deck or other curved piece. The only downside is that tools tend to collect on it and get in the way.
