Malcolm,
I built some mobile stands for a strongback last year (and embarrassingly, I've not used them to build a kayak yet). The construction thread is here: http://www.blueheronkayaks.com/phpBB2/viewtopic.php?t=964 .

I went for fully locking casters for one side of each stand to help keep them from moving around unless it was intentional. I'll use my 2x8 piece of osb work surface directly on top of each of the stands, and then the strongback down the middle. Here's a picture of the stands in the basement workshop before the renovation was finished.
