I'm a first time builder almost done with the hull of a Great Auk. I Chose to go with beveled edges rather than cove and bead and don't regret it. It really is quite simple. I found it easiest to place the new strip in place, secure it lightly at the bow, stern, and mid point. Pull the strip away just enough to get the plane on it and match the gap that was between the strips to the plane angle and the new strip. Work little by little down the length of the strip fitting as you go and adjusting the angle based on the gap that is left. Move the strip clamps as needed to pull away the strip where you are working.

To me the benifits:
don't have to buy router bits
don't have to spend time routing the strips
more strips from less wood
don't have to worry as much about fragile strip edges
finger jointing, and tapered end jointing is easier
you don't have to be concerned adding pin striping and trim strips

Draw backs that I can see:
No trough to lay glue into
Alignment from strip to strip is probably more fair. I notice when gluing beveled strips that they can slide in and out a bit against each other between forms but I don't see this as a problem as it will all be planed down in the end.
