I've stripped the deck on 2 hybrids now (CH17 & oneOcean Cirrus). i used a bevel edge and had no trouble getting near perfect joints. To plane the bevel, I placed the strip in the groove of a T&G floorboard that had bowed. the curve in the board held the strip in place while I guestimated how much bevel I would need. I erred on the conservative side, put the strip in place and planed a bit more off here and there when needed. i'm not much of a wood worker but had no trouble getting perfect joins.
