I get the same feelings in hardwood stores :)

With really thin strips I'd just use a rolling bevel and forget the cove and bead. 3/16" strips work fine. I'd too recommend using these woods only as accents or you'll end up with a really heavy kayak. My Disko Bay has the sides in mahogany and tips on the deck in figured cherry and just that added around 10 lbs. Doing the whole boat that way would probably triple the weight.
