Hi Tod,
No worries, I forgot the smiley in my post.
I have used an old chisel for similar, (it's broken, don't worry) :) but I used it bevel down. This let me control the position of the edge in relation to the wood surface when taking off glue ridges. With spill/drips, I have used a sharp curved knife held vertical to the surface. A precise touch works nicely and it's nice to see the glue flaking off without peeling timber as well. It's best done when the glue is set but not hard. A bit like epoxy.

I haven't worked too much gluing cedar, mostly pine type and hardwoods, though. It might make some difference.
