Kurt Mauerer built a couple of Cormorants, and felt they were very tippy at first... then not at all, as I recall. Maybe he'll pipe in.
I had a first-timer in my Chesapeake this summer - didn't swim, never been in a boat, big shoulders (high center gravity) - he was very 'shakey' for about 5 minutes - and after that, I couldn't keep him close to shore; he was very comfortable, had his 'sealegs', and felt quite stable. That 'shakey' spell passes very quickly
