Not wanting to start the curved deck vs. multi fight again, but curves are stronger. If you want a taller deck you could just put beams in with a greater curve.

I also have knee problems, I found it was less a height problem than it was a width problem. You may want to try out wider boats, like the CLC Mill Creek series. They came out with a longer version of the single, its wrth taking a look.
