Glass, glass, glass! Did I say glass? :) Given the expected uses/abuses, put the glass on at least the outside, whether it be one 6 oz or multiple 2 oz. It will give you piece of mind for the likely scrapes, drops, knocks, collisions and over racheting on the car racks! As discussed here earlier, you can probably get away with light glass or tape only on the inside.
You might also want to consider an abrasion strip(s) of tape on the keel line (applied over the glass and feathered smooth). This was part of our Pygmy Tern design and they've been well worth it. They have prevented more serious damage to the underlying glass many times.
