Buy a couple of used boats. Any (decent) kayak is going to take too much time to be disposable, especially if you are short on time and it is summer. Use your limited time to get the good boats in the water. After, you can re-sell the plastic ones, or you may decide to keep them around for friends to paddle.

By the way, an old glass WW boat with a skeg attached works well for the kids.
