Adam,
I agree with Ed and Ronnie. We built a 16LT last year, and I really would not want more volume in the boat. Moving the forward bulkhead to suit you is also a good tip. The kits are a great way turn out a nice project, and there is a ton of specific support on the CLC bulletin board.
I can't comment on fishing from a kayak - no experience with it.
