I may be missing something here, but shouldn't a sailboat twice as long, twice as wide, and twice as deep/high weigh twice as much and carry twice the payload?

You're right. It wouldn't have twice the volume, so it wouldn't have twice the weight. I think the 1.728 factor Mike Spence gave is far more appropriate. My apologies. I think I need another cup of coffee or something.
