I've struggled with the same problem on my expedition single. I made recessed fittings and put them in place before I bonded the deck and hull. Right now i don't use them. I just have my paddle float bungies on. I have used it mostly for day paddles in known waters so maps etc aren't that crutial. I would recommend as it looks like nick does to use bungies for most of the rigging. I found running bungies instead of a full length deck line. I think it is enough for holding on to if you are in the water, but this is only my opinion and I am sure there are great reasons to have full length lines It does seem like a shame to spend all this time making curving designs on a boat and then put the lines back on it. Maybe we could get some wood colored rigging? :)
