...either too little or too much hardener will result in an incomplete/improper cure. Supposedly, some people intentionally add too much hardner in order to produce a rubbery epoxy for specific applications. The literature I've read indicates that a +/- 10% variation in hardner will allow proper curing, but anything beyond that results in a weak and/or uncured product.
