A few months ago I was asking myself the same questions. I went from a S&G from a kit to a S&G from plans to building the Great Auk from Nick's books offset tables. The answer to your questions in my view is that any of them are seaworthy and you can get various styles to give the handling qualities that are most important to you and it boils down to how much time you are willing to invest. I invested something over 300 hours in the strip built. They allow you to be creative in the beauty you design into it and it is most satisfying to see it develop into a finished kayak. You will have plenty of skills to do any of these choices but do you have the time? Right now I'm building a hybrid. The plans for a S&G Pygmy Golden Eye for the hull with a cedar strip deck. Earl
