Almost any double would do. The hull is designed for the weight of two people and their gear. You could probably add another 100 pounds to your gear and still be floating nicely. You would want to modify the deck to center a single cockpit--which is a reasonably easy job. In putting the cockp9it in the center of this larger boat your feet are going to be in an area that previously had the deck at the highest level, so you should have no problems in hat matter either.

If you build from a kit, call the manufacturer and ask for enough material for the deck, and only a single cockpit coaming. What you save by not getting the materials for the second cockpit coaming should cover the cost of the extra deck materials, so the final price should be about the same, but each company has their own price guidelines.
