Lee has a good point. If you truly want 200 pounds of gear, you need a truly huge boat. 200# is a lot of weight for gear. A nice cast iron kitchen sink probably weights 100 pounds, but that still leaves you another 100# of capacity. 100# is still a lot of weight for gear.

A typical hiker carries around 50# of food and gear. If you figure around 10# per gallon of water, you can carry 5 gallons to give 100# of cargo.

Are you sure you want 200# of gear. Remember you may need to get the boat out of the water sometimes.
