A few additional thoughts:

Don't confuse time with difficulty - I've built both strip and stitch & glue boats. Strip building takes longer, but I don't think it is any more difficult. In fact, I think strip building may be easier once you get the forms set up.

Nick's book is a good place to start if you want info on Stripping. KayakCraft by Ted Moores is also a good one.

Which model is good for you depends on your size, paddling style, and intended use. Plenty of advice along these lines in the archives of this BBS.
