I've done it on several boats and seen no structural issues. there is little stress in this section of the deck on my boats. I do, on s&g, boats install the deck fittings after installing the deck which helps to support the deck if there are any stresses.

Pull the fitting into place with a wire, do not worry about making the thickened epoxy fillet on the inside neat...just generous.
