I plan to do a similar installation on my Guillemot 18 (once completed). You should be able to drill down, through the center of the peak, and into the end pour.

Use a 3/8" x 2" stainless U-bolt, and just slather the threads with some thickened epoxy and push it into the holes. If your end pour doesn't extend far enough back, you might have to do a second end pour. Stand the boat on end, but not all the way to the vertical. Tip the boat so the deck is down so your new end pour just covers the bolt threads and doesn't have to fill the entire end with all that extra weight.

Re: destroying the boat's unadorned aesthetic. Well, you're making safety improvements here; aesthetic may suffer, but that is a healthy tradeoff. You could presumably carve a u-shaped block of wood, glass it well, and glue it to the deck.
