Coaming too high?

I am just learning to roll and have noticed that the further you can lean back on the aft deck, the easier it is to snap your hips. In my Chesapeake 17, leaning back on the deck is impossible for me (I’m 6’2”, weigh 185). I have the same experience in my lower-volume Chesapeake Lt. Either the coaming is too high or the seat too low. A friend suggested building up my seat, but wouldn’t that seriously affect the center of gravity and performance? I’ve tried different production boats where leaning back is much easier. I am about to build a Coho this winter and wonder if there is anything I can do to improve this situation. Recessed cockpit coaming maybe? Any suggestions?
