I have the Arctic Tern and have learned how to roll in it after about 50 tries. It was my first rolling experience, so I can't say it was the boats fault. One thing I did was not put in the thermarest seat, instead I made my own seat out of closed cell foam. I also made some hip pads and knee pads, the cockpit needs the knee pads to roll well. I learned this when one fell off, and I couldn't roll again. I also thought the large cockpit was way to big but getting in and out in surf is so much easier, and on long trips you can put your knees up to get the blood pumping again.
