Not to add to the mass of opinion.

The butt joint is cleaner looking if that area is to remain natural (unpainted). The scarf has to be right on the money or it will look sloppy if left unpainted.

The side panels of a kayak are not under much stress. Either joint will be fine.

Chesapeake who always fights for scarfs uses a butt along the side of the cockpit opening - joining the front and rear halves together. A good trick is to celebrate that joint with a thin piece of white wood. I've seen it done and it looks great.
