A butt joint backed by fiberglass tape will flex enough to follow the contours of most kayaks. You are more likely to get irregularities from the forms that shape a boat or deviations in stithing than from flat spots caused by a fiberglass tape backed butt joint.

Pygmy puts but joints at the ends and towards the middle. With careful placement of the joints (avoiding VERY TIGHT bends) you should have no problems with fiberglass tape backed butt joints. If you back your butt joints with wood that is a different story.
