Strip: EcoPoxy?No Epoxy?

Finally getting around to heat-stripping and re-coating my K1 stripper project boat. I'll need to add new epoxy and glass, but I hate dealing with cleanup and toxicity in general.

Also, I don't have an indoor work space--so I'm a little worried that even with fast hardener, bugs will land in the drying epoxy and be stuck there forever.

I'm halfway tempted to not add either epoxy or glass over what the (cedar?) strips--just varnish. I wonder if it would get beat to hell.

Any thoughts?
